Healthy Holiday Recipe for Tampa Bay Families
With the holiday season just around the corner, healthy eating can be a challenge. Statistics show that half of the annual weight gain of Americans occurs between Thanksgiving and New Year’s Day. After a few years all this extra weight can add up! Below is a healthy version of a favorite holiday recipe for you and your loved ones to enjoy. Ham with Apricots 
Adapted from Good Housekeeping Magazine

Cook Time: 2 hr 15 min

Calories: 240 per serving
Ingredients
- One 7 lb cooked bone-in half ham, smoked
- 6 ounces of dried apricot halves
- 2 Tbls cloves
- 1/2 cup apricot jam or orange marmalade
- 2 Tbls Dijon mustard
Heat oven to 325 degrees.- Remove skin and trim fat from ham, leaving ~1/8 inch. Use cloves to secure apricots to side of ham, leaving space between apricots.
- Place ham in roasting pan, fat side up. Add one cup of water. Cover pan tightly with foil and roast for two hours.
- 15 minutes before timer is set to go off, heat marmalade and mustard to boiling on medium-high in a one-quart saucepan until melted to a glaze. Brush ham with glaze.
- Continue to bake 30 to 40 minutes or until meat thermometer reaches 135 degrees F, brushing with glaze every 15 minutes. (Some apricots may fall off into pan as you glaze.)
- Transfer to cutting board; cover and let stand 20 minutes. Slice and serve.
